I am Molly Thomas(a retired banker) . Our new House has two jackfruit trees. The two trees are of the chembarathi varikka kind (a prime variety of jackfruit) and are full of fruit in season.
Although we made the most of the fruit, many of it went to waste. That was when we decided to process it and make it available to hungry fans of jackfruit. We trained four women to make vattal (fries), unniyappam, ada, varatiyathu, puffs, cutlets, puzhukku and more, all with chakka, ripe and unripe. Our crisp and flaky chakka puffs is commented by customers as a mix of flavours and ingenuity.
Branding our products under the name Marathottam, we began an Instagram page and WhatsApp group and announced the menu for each day on the page. Golden chakka upperi, soft unniappams and gooey chakka varatti get sold the minute they are announced on our page.
Even when the season of raw fruits is over, we still have Chakka Varatty, which is much in demand, specially by those going abroad. We’re also giving it to a few outlets in the city.
To keep our business afloat during the off season, we have diversified into ethnic snacks like aval vilayichathu, kuzhalappam, cheeda and so on.
We were imparted technical support to make value added products from jackfruits at the ICAR Krishi Vigyan Kendra, Mitraniketan. We found them very resourceful and even the other snacks that we make now are doing well.
